
Quick Vegetarian Recipes
Quick vegetarian recipes are very easy to imagine. Three of the first quick vegetarian recipes to spring to mind
are: a salad, a sandwich and a fruit compot. If you are looking for a light snack any of those three quick
vegetarian recipes could be made in minutes or you could combine the three courses to make a more substantial
meal.
Quick Vegetarian Recipes
Pizzas are also good examples of quick vegetarian recipes. If you had premade pizza bases in the freezer, you
would only have to put a topping on one and put it in the oven. There really are plenty of quick vegetarian
recipes.
Here are some real examples of the quick vegetarian recipes suggested above:
Recipe 1
Hot German Bean Salad
6 Servings
1/4 cup white grape juice
2 medium carrots, chopped
1/2 medium red onion, chopped
2 stalks celery, sliced
1/2 cup water or from beans
1/3 cup vinegar
1 Tablespoon sugar
1 T cornstarch
1 vegetable bouillon cube
2 cup black beans, canned
1 cup red kidney beans, canned
1 red onion, optional
In a large skillet, add white grape juice and heat over medium-high heat. Stir fry carrots, onion, and celery
for two minutes. Remove from heat.
In a small bowl, stir together water, vinegar, sugar, cornstarch, and bouillon cube, crumbling cube as much as
possible.
Add mixture to skillet. Cook and stir over medium-high heat 1 to 2 minutes, or until mixture is thickened and
bubbly.
Stir in black and kidney beans. Cook additional 2-3 minutes, stirring occasionally, until mixture is heated
through. Garnish with sliced red onions, if desired.
May be served hot or cold.
Recipe 2
DATE SANDWICHES.
To anyone who desires a sweet sandwich, the date sandwich in the following quick vegetarian recipe will be found
to be very agreeable.
Not all sandwich fillings seem to be satisfactory with bread other than white, but the filling given here can be
utilized with white, graham, or whole-wheat bread.
DATE FILLING
3/4 cup dates
1/4 cup nut meats
1/2 lemon
Wash the dates and remove the seeds. Steam them over hot water or in a double boiler until they are soft, and then
mash them thoroughly.
Squeeze the juice from the lemon, grate the yellow part of the rind and mix with the juice, and add both to the
steamed dates. Then add the nuts chopped very fine.
To make the sandwiches, cut thin slices of bread and spread one slice with butter and the corresponding slice
with the date filling. Place the two together, trim the crusts if desired, and serve.
Recipe 3
STEWED QUINCES AND APPLE
The combination of quinces and apples is delicious. Sweet apples, which are difficult to use as a cooked fruit
because of a lack of flavor, may be combined very satisfactorily with quinces, because the quinces impart their
strong flavour to the bland apples and thus the flavour of both is improved.
(Sufficient to Serve Six)
1 qt. sweet apples
1 pt. quinces
1 lb. sugar
1 cup water
Wash, peel, core, and quarter the fruit. Add the sugar to the water and place over the heat until it comes to a
rapid boil. Then add the quinces and cook until they are partly softened.
Add the sweet apples and continue cooking until both are tender. Remove from the fire, cool and serve.
All of these quick vegetarian recipes can be made beforehand and stored in the refrigerator so that they really
are quick vegetarian recipes.
